 食事をすると、からだがなんとなく温かくなった気がします。これは気のせいではなく、実際に体温が少し上昇します。この現象は「特異動的作用」とか「食事誘導性熱産生」と呼ばれており、からだが食べた物に応答していることを示すわかりやすい事例の一つです。

 特異動的作用だけでなく、からだは摂取した食品に対し様々な応答を示します。特定保健用食品、いわゆるトクホに代表される機能性食品は、こうしたからだの応答を引き起こす食品の生理機能に注目したものです。私たちは食品摂取時の体の応答を遺伝子発現の変化として捉え、網羅的に解析する「ニュートリゲノミクス」の手法を用いて、食品が生理機能を発揮するメカニズムを調べています。

 

 また、私たちのグループでは、新たな食品機能性の探索にショウジョウバエを用いています。ショウジョウバエは飼育スペースが少なくて済み、寿命が約2ヶ月と短いので、短期間に多くの条件で飼育することが可能です。必要な飼料も少量でコスト的にも有利です。ショウジョウバエは遺伝学的手法が確立されており、様々な変異体を利用することが可能です。現在、がんをごく初期の段階で予防する機能や、加齢に伴う認知・運動機能の低下を抑制する機能を評価する系などを用いて、食品の機能性探索を行っています。
